Red, White, and Blue Watermelon Parfaits

A fun and healthy dessert perfect for the 4th of July.

Ingredients

  • 1 large watermelon
  • 3 cartons blueberries
  • 3 cans coconut cream
  • honey optional

Instructions

  1. Chill a can of coconut cream in the fridge upside down for one night.

  2. Place the thick cream that separated from the runny cream into a bowl.

  3. Using a mechanical or handheld mixer, whip the cream until it turns into a fluffy whipped cream texture.

  4. Start out by cutting your watermelon into small chunks. There are so many different ways to cut a watermelon, but for this recipe, the way that you cut it doesn’t matter much as long as you end up with small chunks of watermelon at the end.
  5. Fill (preferably clear) parfait cups 1/3 of the way with watermelon chunks. 
  6. Add a layer of coconut cream on top of your watermelon chunks.
  7. Add a layer of blueberries on top of your coconut cream.

  8. Repeat steps 2 to 4 until your parfait cup is full.

  9. (Optional) Drizzle your parfaits with honey. I personally don’t use any honey for my parfaits because I feel like they are sweet enough already, but if you like them a little bit sweeter, honey will work perfectly!

  10. Chill your parfaits until they’re ready to be served.

Recipe Notes

If you’re low on time, you can swap out the coconut cream for cool whip or whipped cream if you don’t need the parfaits to be dairy free.

If you’re low on time and need the parfaits to be dairy-free, you can substitute coconut yogurt in (or some other dairy-free yogurt) instead of the coconut cream).

If you’re running low on time or really don’t want to cut up the watermelon, you might want to think about buying pre-cut watermelon at your grocery store.

Get creative! You can make these as fancy or basic as you would like! Experiment with the blueberry designs and the coconut cream placement. If you want to get really fancy, you could even use cookie cutters to cut out the watermelon pieces!
